Hey CC, Christmas is soon near us. I thought I'd start up a thread focused on good homemade food and drinks to make and to have with family and friends at gatherings. This can be both alcoholic and non-alcoholic recipes ;)


Bailey's Hot Chocolate
Nestle Hot Chocolate Mix
Milk
Sugar
Bailey's Irish Cream

Heat the milk really hot (BUT DO NOT BOIL!), mix in the hot chocolate mix, and add sugar to taste. Add in a shot of Bailey's. (and if you're fancy, add whipped cream on top and sprinkle cocoa/cinnamon on top)

Bailey's Irish Cream Cheesecake
Ingredients:

Crust:

10 whole graham crackers, broken into pieces
1 1/4 cups pecans
1/4 cup sugar
6 tablespoon butter, melted
Filling:

1 1/2 pounds cream cheese (room temperature)
1 cup sugar
3 large eggs (room temperature)
1/3 cup Baileys Irish Cream liqueur
1 teaspoon vanilla extract
3 ounces white chocolate, broken into pieces
Topping:

1 1/2 cups sour cream
1/4 cup powdered sugar
1 1/2 ounces imported white chocolate, grated
24 pecan halves, lightly toasted
Directions:

For Crust:
Preheat oven to 325° F. Lightly butter 9 inch springform pan. Finely grind graham crackers, pecans, and sugar in processor. Add butter and blend, using on/off turns. Press crumbs onto bottom and 2 inches up sides of prepared pan. Refrigerate 20 minutes.

For filling:
Using electric mixer, beat cream cheese and sugar in large bowl until smooth. Whisk eggs, Baileys, and vanilla in bowl until just blended. Beat egg mixture into cream cheese mixture. Finely chop white chocolate in processor using on/off turns. Add to cream cheese mixture.

Transfer filling to crust-lined pan. Bake until edges of filling are puffed and dry-looking and center is just set, about 50 minutes. Cool on rack.

For topping:
Mix sour cream and powdered sugar in small bowl. Spread topping onto cooled cake. Refrigerate until well chilled, about 6 hours (may be prepared one day ahead). Sprinkle grated chocolate over cake. Place pecans around edge and serve.

Christine's Coffee Liqueur Cookies

Ingredients

2 teaspoons instant coffee granules
2 tablespoons coffee-flavored liqueur
1 cup butter, softened
3/4 cup packed brown sugar
1 cup white sugar
2 eggs
2 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips

Directions

Preheat oven to 300 degrees F (150 degrees C). In a small bowl, dissolve instant coffee crystals into the coffee liqueur; set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. Gradually add eggs and coffee mixture while mixing. Sift together the flour, cocoa, baking soda, and salt; stir into the creamed mixture. Finally, stir in the chocolate chips.
Drop dough by rounded tablespoonfuls onto a cookie sheet. Cookies should be at least 2 inches apart. Bake for 23 to 25 minutes. Immediately transfer cookies to cooling rack after baking. These keep well at room temperature or refrigerated.

Ingredients

* 1 pound whole-wheat penne
* 1 1/2 cups small-curd low-fat cottage cheese
* 1 cup part-skim ricotta cheese
* 1 1/4 cups shredded part-skim mozzarella cheese, divided
* 3 tablespoons chopped parsley
* 2 teaspoons olive oil
* 1 medium onion, chopped
* 4 cloves garlic, finely chopped
* 1 (15-ounce) can low-sodium crushed tomatoes
* 1 (8-ounce) can low-sodium tomato sauce
* 1 teaspoon dried oregano
* 1 teaspoon dried rosemary
* 1/2 teaspoon chili flakes
* 3/4 teaspoon salt
* 1/4 teaspoon pepper
* Cooking spray
* 1/4 cup grated Parmesan (3/4 ounces)

Directions

Preheat oven to 400 degrees F.

Combine the cottage cheese, ricotta cheese, 1/2 cup mozzarella and parsley in a bowl and stir with a fork to incorporate and set aside. Cook pasta until tender but still firm, a minute or 2 less than the package directs. Drain.

Heat the oil in the same pot over medium heat. Add the onion and cook stirring occasionally, until translucent, about 5 minutes. Add the garlic and cook for 30 seconds more. Add the tomatoes, tomato sauce, oregano, rosemary, chili flakes, salt and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes until sauce thickens slightly. Return pasta to pot with sauce and turn off heat. Add cottage cheese mixture.

Spray a 9 by 13-inch glass baking dish with cooking spray then transfer pasta mixture to pan. Top with remaining 3/4 cup mozzarella and the parmesan. Bake until heated through and cheese is melted, 30 minutes.

mmm, that bailey's hot chocolate sounds really good... wish I had some bailey's on hand so I could make it right now.
