Fan Switch:
On the thermostat housing there is a sensor/switch that controls the fan. At the engine side of the lower radiator hose (comes from he bottom of the rad) there is the thermostat housing with a fairly large sensor/switch that screws into it. If the wiring looks good, fuses and relays are good and the fan is good. You can try replacing or testing the sensor. Most sensors/switches can be tested with a muliti-meter. You would have to research the correct testing procedure, probably found in a repair manual for the car.
Temp gauge:
Theres a seperate sensor below the distributor that looks like the end of a spark plug (a brass nipple more or less) that sends a signal to the temp gauge in the car. A wire with a boot covers it when its pluged in so you wont see the end of the sensor when its pluged in. Its a bugger to get at!
