What to do with my car situation?

My little backstory- I have had a 1993 Corolla since I was 16. I have had it for 4, almost 5 years now. It only has 90k miles on it. I never did any sort of performance upgrades or anything to it. Just basic maintenance. It's in awesome condition. My senior year out of highschool, I bought my 1992 CBR F2- which I love dearly. I have done all the work on it myself and learned sooo much about it the last few years. I constantly had my fairings off in the summers, tuning it, trying to make it run how I wanted. Only then, would the fairings go on and I would have everything looking good. Performance comes first. Well, now that there's not much more to do to my bike, I would like to start some roots in the car world. And at my age and financial position, a newer car is obviously out of the question.

I have absolutely no experience with cars, but I have always considered myself a very resourceful, mechanically inclined learner. My only problem is patience >.>. I decided I definitely want to do the work myself, and learn my car, just as I did my bike. The problem is- my corolla is a 3 speed automatic. I have checked out some forums on what it takes to convert to a manual transmission, and it seems a little (wayyy) over my head. So, I figure since I loved my XR 80 and CBR 600, I should go with another honda.

Now, I am not exaggerating when I say I know nothing about car performance- but I would certainly guess that I want something manual? I have no intentions of trying something like a transmission swap or engine swap for my first car project- but am definitely interested in performance upgrades over visual upgrades. So, basically I want to know which is "the best" (your favorite) generation civic for a new user to go through the engine and chassis upgrade process?

That is, unless you think for some reason I should hold on to the mint corolla and see what I can do with that? Should I get an already running-well civic? Should I try and find a little bit of a junker to fix up? Should I find a roller, then look for an engine? How many miles is too many?
