yeah the thing about deer when you hit them with your car, is most of that meat is going to be severly bruised unless the animal dies instantly, along with if there are any ruptured organs it will tant the meat.
the only reason i know this is i cliped on back in 06 with MR2, and the better portion of meat towards the front of the rib cage was unuseable because the deer lived for like another 20 minutes, which gave the tissue time to gain alot of extra blood flow, but the rest of it was good, i gave it to a buddy that knew how to process them and he made like 3 big bags of jerky, it was ballin, and all i had to do was pull my fender back out and re-align the head light.
