Need ideas for spicy food

So here's the deal. I found some dried ghost peppers (naga/bhut jolokia) and will be using them to make a hot sauce... but I've got WAY more than I need for a hot sauce so I'm looking for some other uses. i've thought of grinding a few up and sprinkling it on pizza or whatever, but I'm really looking for more ideas on how I can use these.

For those who aren't familiar with the pepper, it's the hottest pepper in the world with an average of about 1,000,000 rating on the scoville scale. For comparison, a jalapeno only reaches about 2500-8000 on the scoville scale. This makes the ghost pepper 125-400 times hotter than a jalapeno... Yes, it's scorching (from what I hear). Any chile heads out there who can hook me up with a good recipe or idea? Simple recipes with only a few ingredients are best.

Throw some in some mayonnaise for sandwiches.

mmm spicy mayonnaise... that might work. Kind of makes me think of a chipotle mayo.

1/2 ounce stemmed, dried bhut jolokia chiles
2 cloves garlic
1 tablespoon white vinegar
1 (15-ounce) can diced tomatoes with juice
Salt
Ingredients
In a bowl, add dried chiles, and cover with hot water. Rehydrate for 15 minutes. In a blender, combine chiles and 1/3 cup soaking water, and then add garlic and vinegar; purée. In a bowl, add chile purée to tomatoes, and combine.

make a curry, the recipes are easy to find online and you would would have a killer dinner for 3-4 people. just put some if the peppers in as you cook the main parts....

put some in a bottle of ketchup the best thing for fresh fries, nuggets, w/e, or dry them up and make a powder

an aioli will be nice. a nice rub can be made from it if you have access to a coffee grinder, and i may recommend you contacting erin on here, he has some cooking experience. you can make a nice salsa like was mentioned earlier. curry seems to be a waist if you ask me.

Hot sauce recipe or salsa? Have you personally tried this?

Curry sounds good, but I've never made curry before. Maybe I'll give it a shot if I can find a simple recipe for it. Ketchup/aioli also sounds good.. These are all great ideas. If you have more, keep em coming!

I started today. So far I ground a few up and put them in a pepper shaker. I'm thinking it'll be good on pizza (so long as I use it sparingly). I've got one rehydrating right now that I'm going to make a spicy mayo with (per Jason's suggestion).

I have an itch and I can tell you that I've never been so afraid to scratch my eye in my life. :lol:

joe that one that got traction gave you sounds like hot sauce given the amount of vinegar used in the recipe, most salsas do not call for any at all. think of tabasco that s**t is like pure vinegar then think pace or some other local brand of fresh cut salsa, pretty sweet in comparison. another idea that has yet to be mentioned is a jelly. sometimes when we have guests we make a basic dipping appetizers, it goes something like this: red pepper jelly, found all over the place then some cream cheese and tortilla chips maybe try and add some of these bad boys into a sweet jelly and use like that? or perhaps add some to an existing red pepper jelly. as this thread moves forward i will continue to update with ideas that i have. you have sparked my interest. as far as mayo goes, i am thinking that its not strong enough to stand up to the pepper, it will not sit too well.

if you do end up making salsa remember to let the bowl rest for a night or longer, the longer the hotter it gets. i may try to make my salsa in the next couple days and then incorporate ghosts with it.

I've seen red pepper jelly, but I've never had it. Do you mix the cream cheese with the jelly or are they eaten separately?

Good point on the vinegar. I've been looking for a hot sauce recipe to use these in... I might have to try that one.

I just made the ghost pepper mayo. I added one rehydrated pepper to about 3-4 heaping teaspoons of mayo, but it wasn't hot enough, so I added a couple dashes of the ground ghost pepper and I think it's perfect now. I put it on a sandwich with hickory smoked tuna, a spicy olive mix and a slice of melted cheese, lightly toasted the bread and it's amazing.

you pour the jelly on top of the entire bar of cream cheese. so the ghost mayo is a hit?
