1 lb of bowtie noodles
1/3 cup of butter or i cant believe its not butter
3 stalks of broccoli
1-2 chicken breasts
grated romance cheese

cut broccoli and place in a steamer while you boil water for the noodles. grill the chicken and chop into strips when done. broccoli should be easily punctured by a fork when they are done. mix butter, noodles, broccoli, and as much parm or romano cheese as you want. mix in chicken and serve. very filling

anybody,

do u have a good recipe for blackening fish or have a writeup on the process. every summer my family comes down to our place in florida and gets some of the best fish i've ever tasted. lots of grouper, mahi, amberjack, swordfish etc.

i'd just like to hear someone else's imput.

Whenever I do blackened stuff I just buy the seasoning. I really don't know much about southern cooking being so far north geographically :lol:

Just melt a bunch of butter in a skillet, dip the fillets in each side, pull out and put on clean surface and coat with the mix. Works great everytime. Then put back in the skillet and fry until fish is flaky.

edit: you wanna keep the skillet HOT, medium high on the stove should be good.

^^ It's supposed to get thick though, you want it to stick to the wings. Definitely use two or three cloves AND the shallots, it cuts the sweetness of the root beer. If you want it to be spicy, instead of cayenne try and dice in a jalapeno or use dried chilli flakes (pizza chilis).
alright ill def haveta try that this weekend. more garlic, some diced jalapenos.
approx. how long did you keep it on the stove for until it turned into a glaze consistency?

^^ I kept mine on pretty long because it wasn't reducing, so about fifteen minutes in I turned the heat to a decent level. It's hard to say, it really doesn't need to be uber-thick. As long as it doesn't burn you should be fine.

yea i mean mine wasnt really thick, but it was thick enough to stay on the wings, with the exception of a few drips here and there when i was eating them. idk i left it on the stove for awhile, lost alot of rootbeer lol. i stirred it like a madman it didnt burn at all lol.

Ok, I just got a request for Swedish Meatballs, so I figured I might oblige. This is hella party food, not classy or hard or labor intensive.

Swedish Meatballs

Ingredients
2 lb Frozen Meatballs (fully cooked)
1 Yellow Onion, large chop
1 Poblano Pepper, large chop (no seeds)
1 20z can of Pineapple Chunks
1 14.5oz can of Stewed Tomatoes
1 12oz bottle of Lager (Budweiser, MGD, Sessions, etc)
1/4 c Brown Sugar
2 T Corn Starch
1/4 c Cold Water
Salt
Pepper
Celery Salt
Dill Weed
Parsley
Red Wine
EVOO

Procedure:
1. Chop up the onion and pepper, and sautee in a large pot with EVOO.
2. As the vegies begin to sweat, season liberally with salt and pepper. Let them sweat about 5 minutes. Deglaze with red wine.
3. Strain the juices from the pineapple and the tomatoes -- reserve for later. Add the tomatoes and pineapple to the pot. If you don't want really spicy, remove the poblano pepper chunks now.
4. Season veggie mixture with dill, parsley (lots), celery salt, and some extra SnP.
5. Add the meatballs, and stir to coat. Add the reserved juices and one bottle of beer.
6. Bring to a rolling boil. Add brown sugar.
7. Mix water and corn starch till disolved. Stir into boiling mixture. This should begin to thicken quickly.
8. Bring to a low simmer, and cover. Cook till meatballs are 165° F.

If possible, serve in an electric heating dish to keep warm (Crock Pot, etc).

aight so i just seen this and figured if post some southern s**t, fried mac and cheese, so here we go you really need to make the mac and cheese the night before so you put it in the fridge over night so it will get hard to be able to do this , so here is how to make the mac and cheese homemade style

MAC AND CHESSE , homemade b***h
4 cups cooked elbow macaroni, drained
2 cups grated Cheddar
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter, cut into pieces
1/2 teaspoon salt
1 cup milk
Preheat oven to 350 degrees F.

Once you have the macaroni cooked and drained, place in a large bowl and while still hot, add the Cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes,after you bake it put that s**t in the fridge with some suran wrap/tin foil

then the next day you will need
Peanut oil, for frying
1 dish of your mac and cheese from last night and cut it into 15 squares, recipe follows
Flour, for dredging
1 egg, beaten
Plain bread crumbs, for dredging

now heat 2 inches of oil in a large, heavy Dutch oven to 350 degrees,or a deep fryer (frydaddy) w/e yall call em,cover each Cheesy Mac square in flour, then egg, and then bread crumbs to coat. Fry for about 1 minute on each side until golden brown. Drain on paper towels, and let that s**t cool for a min and enjoy,

Hey Guys , Just stopping in and seeing how my thread is doing. Sorry for such the long hiatus but School and work killed me . Plus i moved across the country . I'm in California now running my own place. I finally got a head chef job. thanks to everyone that kept this thread going for a little while
