How do you start a job and let every bit of instruction given go in one ear and out the other, and fail at the simplest tasks?

I'm training a guy like that at work right now. He acts like he understands the task completely but when it gets down to it he needs you to hold his hand and walk him through it step by step. He had the nerve to put "good listener" and "catch on quick" on his application.
I beg to differ.
I would love to see his application, I don't even know how he got far enough in the process to actually get in here and "working."
We had 3 new people start monday. Dips***, old guy, and this other guy.
Old guy is slow, but I'm working on that.
Other guy catches on real quick, barely needs instruction, perfect hire.
Then we have dips***. I mean, overflowed the sinks twice within an hour yesterday, left without draining 2 of them, left without cleaning everything, etc...and that was just the last 1200-person hour.
At least I get another new girl today that has a couple years experience in a fast-paced location like I did when I started

My work does around 2000 a day with the average sale being about 6.97 (sandwich combo, most popular item). How about yours? Just curious.
We're a pretty small company. Our maximum seating capacity is 82 if your include our outdoor seating as well.
Daily sales - Vary. Monday was 2800, yesterday was 3300, today should be closer to 4k
Average ticket - $5.00 +/-
I'm getting my frontline staff to increase upsells and it's going well so far.
Daily customer count - 600 (M/T-T/F), Wednesdays are a big day so I predict about 800 or more
Seating capacity - I think we can fit something like 400+ inside
But that's just our unit. Then you add Pollo Tropical, Freshen's, and a sushi/stir-fry place and that completes our area.
Then around the corner we have the Trading Post (mini store), Chili's, Einstein's, Salad Creations, and Subway.
There's other businesses around campus but those listed are in my immediate area.
Hot diggity damn.
Yeah we're short ticket orders. Order at the register, ticket goes back, drinks are self serve, on a slow day like Monday it will literally be me (manager) and two employees. I'll take the order, one will put it together, and one will cook whatever is needed on the flat top.
As you can see it's a flawed system. It leaves me with hardly any room to manage. Can't pay attention to food quality or customer service if we're busy and all positions are literally locked down. For food to get ran it literally entails one worker leaving their station and then the middle gets backed up. It's stupid. That's Monday, Tuesday, AND Wednesday. Thursday, Friday and Saturday I only get one extra person, and if we don't reach a certain amount in sales that extra has to go home early. Putting me in the same situation.

I am learning a lot. We learned gear ratios yesterday and how to calculate torque and RPM between gears. Today we put the transmissions back together and then took them all apart again, and have to put them together as well.Growing up so fast! :'(
