Noticed top hose goes to the evap canister, one on bottom not sure, and the orange line on the right goes to a bracket on the fuel filter but it's not connected to anything

Cool. Do you know how that valve works? I don't understand why the right orange hose and bottom one look like they don't connect to anything, both vented? Going off the diagram you linked to

Just curious now that I noticed that valve. I understand how evap system works in it's simplest form just trying to get a better understanding

The first diagram tells you generally how the EVAP system works. The second diagram is the EVAP system in your specific car.

Based on your understanding of the diagrams, ask a specific question.

I'm just curious what those two hoses that aren't attached to the canister vent valve are for?

In the diagrams they're just left open, I'm guessing for fresh air inlet? If so though why the need for two and why are they placed where they are rather than just say a small hose dangling on each end

I am not absolutely sure, but I think I have a good guess.

The upper hose is where air is drawn into the canister, and the lower is a drain hose just in case some water got into the hose. You wouldn't want water sucking into the canister, if you know what I mean.
