its not that complicated. if youre going to drive the car to the dyno on a VAFC then just set it kinda high so you dont blow your motor up on the way to indianapolis. search the archives @ pgmfi.com for a setup that looks similar to the setup that youre going to run on your chipped ecu. that is, look for someone thats using the same engine, same turbo with the same a/r, and same size injectors. there are millions of basemaps on that site so finding one that suits you best shouldnt be hard at all. that would actually save you some dyno time also. then buy a chipped ecu from someone that did their own tuning, and have them burn that basemap for you. done and done. im not sure about the whole EGT thing, just keep an eye on your thermometer

ps. i highly recommend running uberdata or hondata. i favor uberdata because of the price difference and the fact you can do your own tuning (because the prog is free). plus youll find a lot more dyno tuners for uber. at least i did in socal. but hondata is a superior system.
