Here is how to beat all of that coming from a guy that had a very bad teenage run.
1) Stock interior is more desirable on these than 90% of the aftermarket stuff because so many people rice out the interior and you can't sell that junk on the streets, plus a lot of people are looking to de-rice the civic they just bought so dumping the stock stuff is very easy.
2) Removable faceplate? You can buy replacement faceplates on ebay for very cheap, slap that s**t on, and ditch the stereo to someone or a pawn shop. Most of the reason that companies stopped making these is because people found out they don't do much good.
3) Removable steering wheel? Pair of pliers and you have a makeshift steering wheel to get the car to someone that can tow it or to a garage to strip it. Removable steering wheel with hub lock (like NRG's round cover lock), can be drilled out without much effort and then the pliers can be used. Better yet, all they have to do is find out what removable hub you have and borrow one from someone that has one. They aren't keyed differently and are interchangeable (most brands are anyway).
4) Clutch lock. Can be hacked off. They make battery powered sawzalls now that thieves love. Would make quick work of that clutch lock or could just cut off the foot on the clutch pedal and slip it off. Can still drive the car with the clutch pedal without the foot pad if needed. Thieves are very resourceful.
5) Basic fuel kill switch can be quickly bypassed as the pump is right under the back seat. Wire could be temporarily unplugged and direct line could be fed to power it up. Had a friend that remounted and used to take his main relay with him when he left the car somewhere. That would be a better option to set up a kill switch that disables both ignition and all of the fuel system. Not just the fuel kill tapped into the fuel pump power.
Now consider that all of these are easily beat one by one, but a bunch of them together will defeat most amateur thieves. They won't want to hassle with it and will move on to an easier target. The most dedicated ones or ones that REALLY want the car will take it by any means. Your worry is going to be highschool kids like my friends and I were that were good at what we did. Kind of like on gone in 60 seconds but to a very lesser degree obviously.
We had people that would tell us specific parts they needed (or wanted) and we would go after cars with those parts. That or tools that would sit there in the parking lot and show off all those flashy aftermarket parts and "bumpin' stereos".
