I'm sure they would ride the same with a smaller bike, but for most of those guys, those were their first bikes (my best friend included). There are people who will ride like assholes regardless, there are people who will ride great regardless, there are people who have a responsible understanding the bike and it's power, there are those who could care less. Lots of variables to consider.
Just because a bike is slower, does not inherently make it safer. It's still a two-wheeled, high-speed contraption that can reach 100mph in seconds. There is nothing "safe" about that at all.

Woke up at 8, made breakfast, did laundry, vacuumed, swiffered the kitchen and bathroom, cleaned the bathroom, dusted my room, returned my Time Warner modem since I got my own, raked my parents backyard with my brother, finished the campaign in COD: Ghosts, and now I'm about to take a nap then head out to dinner with family. This is the most I've done in one day since moving in over a month ago lol.
