mesquite is hard to find and not to mention expensive here in MI. Back in Texas, that's all I used for grilling. Chopped it by the tree and dried it myself too. :cool: How's that for man status b***h?

I've always cut and dried my own wood for grilling, with the exception of some exotic woods. When I worked for a catering company the owner and I would always try to find new woods. I'm partial to cherry in the winter, and always like to try different combinations.

yu, I've used apple, cherry.... but in chunks over the charcoal. When I use mequite, that's all I use.

People tend to confuse BBQ'ing and Grilling.

BBQ'ing = Natural charcoal (scorched wood) and dried wood. meant for slow cooking
Grilling = Propane or charcoal, meant for fast cooking

When I BBQ I use mesquite, cherry and hickory.

When I can get my hands on it, I love Peach wood.

eh... my wife is Asian so rice is always there. Those ribs were marinated asian style anyway. :yummy:

I make my pork ribs in the oven for an hour with Sweet Baby Ray's Original Sauce. Sweet Baby Ray's is the closest thing to southern BBQ here in Chicago, IMO. Sticky Fingers in Charleston, SC makes the best Memphis Dry Rub ribs I've ever tasted. :drool: :drool: Famous Dave's is too chained out to be original.

holy s**t, sweet baby's rays original is the ONLY bbq sauce I use. :yummy: and when I say the name, I have to say it in a high pitch black guy's voice.





when I do make pork ribs, I slow cook them and use some orange juice to make the sauce sticks. ;) I like dry ibs with rub too! Less messy and I can add my own sauce.

marinated eh! hmmm theres a special ingredient for marinated meat in southeast asia called calamansi (calamodin) which can definitly sting your taste buds! your wife should know it for sure! :P
